The counter keeps a single list — bread, the morning case, the pastry case, whole cakes and pies, cookies by the tray, and two cakes baked for dogs. The account publishes that list twice, once for dine-in and once for to-go, and keeps a two-item side menu of its own beside it.
You do not switch a tab here. You walk through a doorway and the floor changes colour.

The counter opens with bread — multigrain, semolina, the twist. By mid-morning the pastry case fills. Cakes and pies leave whole, in a box.
The cookie tray never really empties. Two of the cakes are baked for dogs. And the same list goes out twice — once to eat in, once to carry out.
